Type of cuisine I like to cook:

I like to cook a wide variety of food but it usually has tacos loosely involved with it in some way or another.

Specialty:

I make a duck mole taco that is out of this world and has broken the tooth of a top chef contestant, turn a vegetarian back into a meat eater, and convinced my grandmother that both DUCK and TACOS could be delicious.

Favorite Kitchen Tool:

Vacuum Chamber. In trying to prepare elegant food with restrained conditions a vacuum packing chamber is essential. It is great for preparing food sous vide, organizing elements, or just preserving food. It is extremely expensive but that investment five years ago has been returned to me many times over.

Past & Present:

I founded an international culinary performance arts company called a razor, a shiny knife in 2007 which prepares haute cuisine in unique and dynamic environments outside of restaurants around the world. I teach the molecular gastronomy classes at the brooklyn kitchen as often as they let me.
