A Tuscan pasta standard.The Martelli family makes these pastas in the tiny Tuscan town of Lari, which is on the way to nowhere and out of the way from everywhere. Only Martelli family members create the pasta, doing everything right that most commercial pasta makers do wrong. They insist on using only the hardest durum wheat flour, extrude their pasta through traditional bronze dies, which makes the pasta grip the sauce, and take their time drying the pasta. Time is the key, since the slow dry makes the texture more chewy and the flavor more intense, more bread-like than raw wheat flavored. ,,Like any good pasta, these guys don't need much. Cook in heavily salted water till it's al dente, just slightly firm. Once your order has shipped, tracking information will be provided.

We determine the most efficient shipping carrier for your order. We use UPS as primary shipper, but special arrangement can be made upon request. PLEASE NOTE that if you are receiving perishable goods, someone MUST be available to receive the package.

RETURN POLICY: We offer a full refund within 30 days for items that are damaged, faulty or unused. Proof of purchase must be provided when making a return. Please call customer service at 718.389.2982, in advance to obtain an RMA number (Return Merchandise Authorization) within 30 days of purchase date.

All Class tickets are Will-Call, your name will be placed on a list at the store, and nothing will be mailed to you. If you are thinking of purchasing a class as a gift, we encourage you to consider purchasing a gift card, which can be used towards a class that fits their schedule. Please know that if you purchase a class as a gift for someone else, the cancellation policy below will apply.

CLASS CANCELLATION POLICYIf a cancellation is made at least 3 days before the class, we will honor a store credit for the full value of the class, which can be redeemed at any time. If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
