A light and fresh salad with enough protein for a delicious lunch!

(serves 6)

1 package Blue Hill Bay Smoked Trout
2 Winesap Apples
2-3 heads Kohlrabi
4 cups Baby Kale
1 cup whole milk yogurt
1/3 cup pine nuts
2 lemons: juice and zest
small handful of mint, chopped fine, some whole leaves reserved for garnish
1/3 cup apple juice
Salt, Pepper to taste 

  1. slice kohlrabi, reserving the tops for a pickle. Chef notes that they can be charred on the grill!
  2. Slice apples
  3. Toast pine nuts until just browned on all sides, keeping the pan moving to avoid burning
  4. Mix yogurt, lemon juice and zest, minced mint, and apple juice
  5. Shred the trout into chunks, mix with all other ingredients and toss with yogurt dressing, season to taste
  6. Serve garnished with pine nuts and mint

RETURN POLICY: We offer a full refund within 30 days for items that are damaged, faulty or unused. Proof of purchase must be provided when making a return. Please call customer service at 718.389.2982, in advance to obtain an RMA number (Return Merchandise Authorization) within 30 days of purchase date.

All Class tickets are Will-Call, your name will be placed on a list at the store, and nothing will be mailed to you. If you are thinking of purchasing a class as a gift, we encourage you to consider purchasing a gift card, which can be used towards a class that fits their schedule. Please know that if you purchase a class as a gift for someone else, the cancellation policy below will apply.

CLASS CANCELLATION POLICYIf a cancellation is made at least 3 days before the class, we will honor a store credit for the full value of the class, which can be redeemed at any time. If you cancel fewer than 3 days (72 hours) before the class, we will not offer a refund; however, class tickets are completely transferable and you are always welcome to send someone in your place.
