Jim Merola Handmade
A Brooklyn native, Jim Merola has been making knives for 9 years. A passion for collecting knives that started with Boy Scouts inspired Jim to design and create his own. His Knives are handcrafted with the finest materials, the blades from 154CM stainless steel from Crucible Metals, a NY State specialty steel manufacturer.
Care and Use: Jim Merola knives have very fine edges, designed for cutting all types of food. Always use a cutting board made of plastic or wood, never counter tops or hard materials. Do not cut bones. Hand wash, no dishwasher.
Because many electric sharpeners are too couarse and grind too much metal sharpening should always be done carefully by hand on a fine stone, ceramic or diamond sharpener (600 to 1200 grit)with an angle of 18 to 22 degrees.
