Ayla Walter, General Manager and Lead Instructor of the Brooklyn Kitchen Industry City, encourages a calm and confident approach to cooking. Ayla specializes in cooking food that is “simple food done right.” Throughout her career in restaurants and catering, Ayla has stayed close to the Atlantic Ocean, cooking in the coastal cities of Providence, Charleston, and Boston, and on Martha’s Vineyard.

One of Ayla’s cookbook inspirations is Salt & Silver: Travel Surf Cook. It’s written by two German surfer dudes, surfing and eating their way through the Pacific coast of the Americas. Ayla brings that spirit into the kitchen studio; eager to learn and share new tastes and techniques.

Focusing on fresh and simple flavors, Ayla believes that nobody should be afraid of home cooking. She brings the efficiency and speed honed in catering kitchens, and is stoked to teach students how to cook simply at home.

When she’s not in the kitchen studio, Ayla is probably scouring the city for new cafes and secret spots, like her current favorites Frankel’s Deli and Peter Pan Donuts in Greenpoint, and Teado Tea House and Kopitiam on the Lower East Side.
