Beating the Heat & Granita

It’s Summer & it’s HOT. Living in NYC, we like to think we can really relate the most with our tiny apartments & half-ass AC window units. But we know some of y’all have it even worse and the last thing you want to do is cook, am I right? So how about a meal that requires minimal to almost no heat? Bingo! Now we’re talking. What you need is a “Beat the Heat” menu.
          This isn’t just about minimal heat cooking. It is also about what can I do ahead of time? Besides the obvious factor of heat what else makes us begin to perspire is the amount of times we are over a stove or chopping etc. What about when we are finally able to have gatherings? Are you going to whip out a cute sun dress & then sweat it up while preparing your meal for the guests? That sounds like the worst. You want to be fresh for your guests & so should the food.
       Start off with a Granita. You can make this a week in advance if you want to, but if you give yourself 2-3 hour ahead you can take a trip to the freezer ever 30 min for a cool down. Sounds promising, we know. So, what exactly is a granita? First off, it’s going to be your cheat frozen dessert (no need to learn how to churn ice cream, at least not now), your palate cleanser (when you want to be fancy) or a boozy cocktail, because hard times require hard liquor.
Watermelon Granita
    1 small watermelon or ½ of a large
    ¼ cup sugar
1-2 limes, lemons, pretty much any citrus you like (but the first to will add punch!)
  1. Cut open your watermelon, & scoop into a blender.
  2. Add sugar & citrus. Blend. Pour into a baking pan with at least 1-inch sides.
  3. Place in the freezer.
  4. Every 30 minutes for the next 2-3 hours, use a fork to rake through the ice.
The finished product will somewhere between a slush puppy & a snow cone.
Variations can include switching out your fruit but remember, for fruits that contain less water than a watermelon, up your liquids to keep consistency.
 ****Turn this dessert or palate cleanser in to a boozy night with friends. Cucumber & Gin, berries & rose, cantaloupe and champagne!
