We introduced this recipe for our Valentine’s Dinner classes, and it was such a hit that we brought it back for Date Night menu! Simple to prepare and flexible to your taste, salmon’s natural fats saturates with bright citrus and earthy thyme and rosemary. Feel free to substitute citrus or add spice!

ingredients

  • 2 6-oz skinless arctic char filets
  • 1 oranges, sliced
  • 1 lemons, sliced
  • 1 shallots, sliced
  • 3-6 sprigs thyme, tarragon, and rosemary
  • Kosher salt
  • About 3 tbsp olive oil
  • directions

    1. Preheat oven to 450 degrees. Cut (8) 10’x10’ squares of parchment paper.
    2. Arrange various slices of citrus directly in the middle of each piece of paper to make a “bed” for the salmon. Top citrus with 2 sprigs of thyme and 1 sprig of rosemary. Place the fish directly on top of the citrus and herbs, season with salt, and cover with another layer of herbs and citrus slices.
    3. Drizzle with olive oil and season with additional salt. Tie each parchment square into a parcel and secure with butcher's twine. Transfer to a sheet tray and bake for 8 minutes. Remove from the oven and serve immediately.
